This month, Chef Chris Look will be perusing the local farm stands and fish markets in preparation for this culinary classic. Chef Look says, “You'll feel like a true professional as we work together to tackle this standby in the fine dining scene. This wonderfully creamy risotto, studded with fresh spring green peas and the sharp flavors of parmesan and lemon, will be a treat to the senses. As the fish sears perfectly in the pan, I’ll provide the how-to, so you'll feel as if you're ‘on the line’ working with this decadent dish.”
