This dish may be a mystery to some, or a lovely reminder of home-cooked family meals to others. Originating in the Portuguese colony of Cape Verde, jagacida made its way to our Island (as well as Chef Looks’ childhood dinner plate) through our sizeable Portuguese immigrant community. Southern Cajun and Creole cooks have their own take in the form of jambalaya, and Western African countries make a similar dish called jollof rice that is centered around tomatoes. For Chef Look, what makes jag rice special is the use of garlic and paprika-packed linguica sausage. Together with beans, onions, and peppers, this dish is sure to be a crowd-pleaser. There’s lots of room in this recipe to experiment, so join us online, and go wild with your favorites.
